RECIPE Haolapeño Fiesta Bowl

Ingredients

5 cloves of garlic, minced

2 large heirloom tomatoes, diced

1 tablespoon olive oil

1 Carmen pepper, diced

3 jalapeños, diced

1 can chickpeas
-
1 can black beans
-
10 ounces of corn
-
1 tablespoon of cumin seeds

2 tablespoons of Chipotle chili powder

A pinch of salt
-
A splash of hot sauce

2 tablespoons of butter
-
2 cups cooked quinoa
-
Chopped cilantro
-
1 teaspoon of Better than Bouillon

Juice from 1 lime
Preparation

Sauté half of the garlic in olive oil until fragrant.

Add everything but the quinoa and simmer for 20 minutes on low heat.

Add in the cooked quinoa and combine.

Garnish with chopped cilantro and the rest of the raw minced garlic, if you can handle that…
